Elevate your brunch game with this wholesome anti-inflammatory spinach, mushroom and chicken strata. Packed with nutrient-rich ingredients like spinach, mushrooms, nutmeg, olive oil and black pepper, this recipe offers a good balance of flavor and health benefits. It’s an easy make ahead dish ideal for family gatherings, girls day get together or just a cozy weekend treat.
I found this recipe on The Modern Proper and tweaked it to add protein while also making it a bit more anti-inflammatory using olive oil and milk alternatives. If you want the full recipe, you can check out The Modern Proper.
I switched out the whole milk for lactose free milk, but you could use almond or cashew milk. I did use sliced swiss cheese that I cubed, but you could switch the cheese for feta or vegan. Instead of using solely a baguette, I mixed whole grain bread with the baguette. The dish was absolutely easy to make, flavorful and scrumptious.

- Large cast iron skillet or pan
- Large mixing bowl

Recipe:
- 3 cups organic baby spinach
- 1 small yellow onion chopped
- 2 cups milk (lactose free, almond or cashew)
- 1 cup heavy cream
- 1 small package of organic portobello mushrooms chopped
- 8 large eggs
- 1 tsp dijon mustard (Grey Poupon)
- 1/2 tsp nutmeg (you could add or switch for tumeric)
- 2 cups shredded swiss cheese (feta)
- salt
- 2 T Olive oil
- 1 package of cooked Italian chicken sausage links (sliced and quartered) or shred two cooked chicken breasts
- fresh ground black pepper
- 2 T organic thyme leaves
- 1 baguette loaf cubed (I used 1/2 baguette and 1/2 organic multi grain bread)
Directions:
- Cube bread and place on pre-greased (with olive oil) baking dish
- bake 350 for about 10 minutes, until crisp, remove and set aside
- In a separate bowl, add eggs, whisk. Add milk, heavy cream, nutmeg, dijon mustard, salt, pepper and cheese. Set aside.
- In a large pan, drizzle 2T olive oil, add onion, protein, mushrooms and thyme. Saute. Turn down heat, add spinach and bread, mix thoroughly. Turn off heat.
- Add liquid mixture to pan slowly and evenly.
Bake in oven at 350 for 1 hour or until golden brown.
