If you like cookies and want a healthy alternative with a hint of chocolate to satisfy your sweet tooth, get baking!
These cookies were not only simple to make, they are absolutely delicious especially right out of the oven! Be sure to sample them when they’ve cooled off enough and heat up the reset in the microwave later.
The simple ingredients that are natural, dairy free, gluten free and vegan makes these cookies easy on your system because you don’t have to worry about those sensitivities. They are sweet enough without being too sweet, there is texture with the rolled oats, moist banana, crispness of the coconut and rolled oats. If you want less texture, I’m sure you could place the rolled oats in a food processor for a finer lest textured cookie. I added an extra hint of sugar because it was left over from another recipe, I would guess the more ripe your bananas are, the sweeter the cookies will be.
The combination of banana, coconut and chocolate flavors with a hint of cinnamon is pleasing to the palette. The nutritional value and high fiber of these cookies helps your digestive system,
I placed mine in a sealed container in the refrigerator to keep them fresh longer. Enjoy!
Ingredients
- 1 cup gluten free rolled oats
- 2 ripe bananas (mashed)
- 4 T Almond Butter (or Cashew Butter)
- 1 Tsp Cinnamon
- 1/2 cup shredded coconut
- 1/2 cup chocolate chips
- 1/2 Tsp sugar (optional-I had some left over and from another recipe)

- Mixing Bowl
- Spatula
- Juice Glass with flat bottom
- Measuring Cup
- Measuring Spoons
- Baking Sheet
- Cooling Rack
- Oven Mitts

Recipe
Preheat oven 350 degrees.
Peel and mash bananas in the mixing bowl. Add all ingredients to the bananas. Mix well.
With large scoop, scoop cookie dough and place on cookie sheet. These cookies will not rise or change size, but leave room in between to press the dough down to flatten slightly with flat bottom juice glass.
Bake-15-18 minutes. Let cool. Delicious served warm. Feel free to heat the remaining cookies later in the microwave.
